Goat Cheese w/ Hot Sauce & Roasted Red Pepper

Monday night dinners are always a struggle in our household.  I am worn out from work and although I would love to cook up a huge meal, I just don't have the energy.  So, we normally do something a little more low-key, like having an appetizer as our main course.  Last week we had the wonderful opportunity to go on vacation with Steve's brother, wife, and niece to Capitiva Island, Florida.  I spent most of my days by the beach or pool reading up on new recipes  and making notes on all the yummy creations I wanted to try.

This one caught my eye immediately when I saw those mouth watering words... Goat Cheese - Delicious! I had some modifications to the original recipe since I didn't have some of the ingredients and I didn't need 6 servings.  We really enjoyed this simple appetizer and I had lots of left over to make a snack later and take some left overs to work the next day. Please pardon the follow picture-my kitchen doesn't have the best lighting and I do not have a good camera...YET! We are making plans to change this soon :)


Goat Cheese With Hot Sauce & Roasted Red Pepper

adapted from Bon Appetit

1 4oz. log of goat cheese
1/2 cup drained roasted red-pepper strips from jar
1/4 cup extra-virgin olive oil
2 tsp Chipotle hot sauce (I used regular hot sauce)
1 garlic clove, pressed
1/8 cup chopped fresh cilantro
Toasted whole wheat baguette slices

Place goat cheese log on platter and cover with sheet of plastic wrap.  Press into large rectangle.  Mix roasted red peppers, olive oil, hot sauce, garlic, and chopped cilantro in small bowl.  Spoon topping over goat cheese and spread on toasted baguette.


*My grocery store did not have Chipotle hot sauce so I just used regular hot sauce.  I also omitted cumin seeds and salted pumpkin seeds that are in the original recipe since I didn't have them on hand.
